Ingredients:

  • For the Beef Patties:

    • 1 lb American Wagyu Beef (Ground)
    • 2 cloves Garlic, finely chopped
    • 1 tsp Thyme
    • 1 tbsp Kosher Salt
    • 1 tbsp Coarse Pepper
    • 2 Eggs (1 for the beef mixture, 1 for onion rings)
  • For Assembly:

    • 1 Baguette, cut into 15 small slices
    • 15 1” to 2” squares of Pork Belly (Bacon is a suitable alternative)
    • 1 Sweet Onion, thinly sliced
    • 1 cup Flour (for onion rings)
    • Cheese of choice (Blue Cheese, Pepper Jack, or Queso recommended)
    • Bear Smoke BBQ Sauces #1-5
    • Olive Oil
    • Garlic Butter (for baguette slices)

Directions:

  1. Prepare the Beef Patties:

    • In a bowl, mix Wagyu beef with garlic, thyme, kosher salt, coarse pepper, and one egg until well combined. Form into 15 small patties.
  2. Prepare Onion Strings:

    • Whisk the remaining egg in a bowl. Dip onion strings in the egg wash, then coat with flour seasoned with salt and pepper.
  3. Preheat the Arteflame Grill:

    • Bring your Arteflame grill to a medium-high heat, preparing it for both grilling and frying.
  4. Cook Pork Belly:

    • Place pork belly squares on the plancha. Cook until crisp, turning as needed.
  5. Toast the Baguette:

    • Dip baguette slices in garlic butter. Toast on the plancha until crisp.
  6. Grill the Beef Patties:

    • Lightly rub olive oil on each patty. Grill on the plancha for approximately 3 minutes per side, or until desired doneness.
  7. Melt the Cheese:

    • Place cheese slices on the plancha to slightly char one side, then place atop each beef patty.
  8. Assemble the Sliders:

    • On each crostini, layer a beef patty, a slice of crispy pork belly, a mound of fried onion strings, and a generous drizzle of your chosen Bear Smoke BBQ Sauce.
