Ingredients for Salmon Burger:

  • 250g fresh salmon
  • 30g breadcrumbs
  • A handful of fresh dill, finely chopped
  • Juice of 1 lime
  • Salt to taste
  • A pinch of cayenne pepper

Ingredients for Guacamole:

  • 1 avocado
  • Chili powder to taste
  • Salt to taste
  • Lime juice to taste

Ingredients for Homemade Toasted Sesame Buns:

  • 340g flour
  • 180g milk
  • 9g dry yeast
  • 27g water
  • 35g sugar
  • 7g table salt
  • 70g soft unsalted cream butter
  • 3 eggs
  • Extra flour for dusting
  • Sesame seeds for topping

Instructions:

For the Salmon Burger:

  1. Mix salmon in a cutter.
  2. Combine with breadcrumbs, dill, lime juice, cayenne pepper, and salt.
  3. Form into 2 patties.

For the Guacamole:

  1. Crush avocado and mix with lime juice, salt, and chili powder.

For the Buns:

  1. Prepare tangzhong with 60g milk, 27g water, and 20g flour. Cook until it thickens.
  2. Warm 120g milk to 35°C, dissolve yeast, and let stand.
  3. In a mixer, combine flour, sugar, salt, milk-yeast mixture, tangzhong, and eggs. Gradually add butter.
  4. Let dough rise until doubled, then divide into 6 parts, form buns, let rise again.
  5. Brush with egg wash, sprinkle sesame seeds, and bake at 190°C for 16-18 minutes.

Grilling:

  1. Preheat Arteflame grill. Grill salmon patties until cooked, flipping once.
  2. Toast sesame buns on the grill.
  3. Assemble burgers with salmon, guacamole, and desired toppings.
