  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 onion, cut into 1-inch pieces
  • 1 cup pineapple chunks

For the Sweet and Sour Sauce:

  • 1/2 cup sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon cornstarch dissolved in 1/4 cup water

  1. Marinate the Chicken:

    • Season the chicken pieces with salt and pepper and toss them with olive oil. Let them marinate for at least 30 minutes in the refrigerator.
  2. Prepare the Arteflame Grill:

    • Preheat your Arteflame Grill to a medium-high heat, ensuring it's ready for both grilling the chicken and vegetables.
  3. Grill the Chicken and Vegetables:

    • Place the chicken pieces on the grill. Cook for 5-6 minutes, then add the bell peppers, onion, and pineapple chunks. Grill, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred, about 10-15 minutes.
  4. Make the Sweet and Sour Sauce:

    • While the chicken and vegetables are grilling, combine the sugar, apple cider vinegar, ketchup, soy sauce, and garlic powder in a saucepan over medium heat. Stir in the cornstarch mixture and bring to a simmer, cooking until the sauce thickens.
  5. Combine and Serve:

    • Once the chicken and vegetables are done, toss them in the sweet and sour sauce until evenly coated. Serve hot, garnished with additional pineapple chunks if desired.

Grilling Tips:

  • Keep the chicken and vegetables moving on the grill to ensure even cooking and prevent sticking.
  • For an extra flavor boost, consider marinating the chicken in a portion of the sweet and sour sauce before grilling.
