Smoky Dutch Kroketten Recipe on the Arteflame Grill

Introduction

Dutch Kroketten are a staple in the Netherlands, known for their crispy exterior and savory meat filling. Cooking them on an Arteflame grill adds a unique smoky flavor, transforming this traditional snack into an irresistible outdoor cooking experience.  Traditional kroketten are long and round but forming them into patties make them much easier to grill and get nice and crispy.

Ingredients

For the Filling:

  • 500g stewing beef
  • 1 liter beef broth
  • 50g unsalted butter
  • 60g all-purpose flour
  • 1 onion, finely chopped
  • 2 tablespoons parsley, chopped
  • 1 teaspoon nutmeg
  • Salt and pepper to taste
  • For the Coating:
  • 100g all-purpose flour
  • 2 large eggs, beaten
  • 200g breadcrumbs

    Equipment

    • Arteflame Grill
    • Saucepan
    • 3 shallow bowls

    Instructions

    1. Cook the Beef:

      • Simmer the beef in the broth until tender, about 2 hours. Remove the beef, shred finely, and set aside. Reserve the broth.  This can be done on the Arteflame.
    2. Make the Ragout:

      • Melt butter in a saucepan on the cooktop. Add the onion and cook until soft. Stir in the flour to form a roux, cooking for 2 minutes. Gradually add about 500ml of the reserved beef broth, stirring continuously until the sauce thickens. Mix in the shredded beef, parsley, nutmeg, salt, and pepper. Chill in the fridge until firm, at least 4 hours.
    3. Shape the Kroketten:

      • Shape the chilled mixture into logs, about 10cm long and 3cm in diameter.  NOTE: It is easier to get the kroketten krispy by forming them into round patties.
    4. Coat the Kroketten:

      • Roll each kroket in flour, dip in beaten egg, then roll in breadcrumbs.
    5. Preheat the Arteflame:

      • Heat the Arteflame grill.
    6. Grill the Kroketten:

      • Place the kroketten on the flat cooktop of the grill. Grill each side until golden brown and crispy, approximately 4-5 minutes per side.
    7. Serve Hot:

      • Serve your smoky Kroketten with mustard or your choice of dipping sauce.
