Arteflame Grill Recipe: Baby Back vs. Spare Ribs & How to Perfectly Grill Them Dorito® Style

Discover the difference between baby back and spare ribs, and master grilling them Dorito® style on your Arteflame Grill. Baby back ribs are leaner and more tender, coming from the upper rib cage, while spare ribs are meatier and fattier, from the bottom section. The Arteflame Grill brings out the smoky flavor, allowing you to grill ribs directly without the need for precooking.

Ingredients:

  • 2 racks baby back ribs or spare ribs (5-6 lb. total)
  • 3 tbsp vegetable oil, for ribs and grill grates

For the Rub:

  • DIY Arteflame Dorito Powder (create your own blend or use a store-bought seasoning mix)
  • 1/2 cup chicken stock
  • 1/4 cup apple cider vinegar
  • 1 1/2 cups barbecue sauce

Directions:

1. Prep the Grill

  • Heat your Arteflame Grill to medium-low heat, aiming for a 300°F temperature on one side of the grill. The unique design of the Arteflame allows for perfect indirect cooking.

2. Mix the Rub

  • Combine the DIY Dorito® seasoning ingredients in a bowl. This rub will add a unique, bold flavor to your ribs.

3. Prepare the Ribs

  • Remove the membrane from the back of the ribs for maximum tenderness. Coat both sides of the ribs with vegetable oil, then evenly apply the Dorito® rub, making sure to cover the ribs generously.

4. Grill the Ribs

  • Place the ribs on the indirect heat side of the grill, bone-side down. Mix the chicken stock and apple cider vinegar, then add this mixture to the bottom of a tray under the ribs. Wrap the ribs in foil to retain moisture. Cook until the ribs reach an internal temperature of 180°F to 190°F, about 90 minutes to 2 hours.

5. Finish with a Sear

  • Increase the grill's heat to 375°F. Oil the grill grates and place the ribs directly on the grill. Brush with BBQ sauce, grilling each side for about 5 minutes. Continue basting and flipping until the sauce caramelizes and the ribs develop a slight char.

6. Serve

  • Once done, let the ribs rest for a few minutes, then slice and serve with additional BBQ sauce. The ribs will be smoky, succulent, and bursting with Dorito®-inspired flavor.
