Red, White and Blue Barbecued Corn
4 to 6 fresh ears of corn, husks and soaks removed.
One cup of mayonnaise
1 1/2 cups of crushed spicy cheese corn snacks, preferably flaming hot Cheetos
1 1/2 cups of white cheddar popcorn, pulsed in a food processor.
1 1/2 cups of crushed blue corn tortilla chips
One lime, cut into six wedges.
Heat up your Arteflame grill to optimum temperature. Add the corn to the grill and cook while rotating to char on all sides, about 5 to 10 minutes total. Meanwhile prepare a baking sheet or rectangular plate with the toppings. Put the toppings in three distinct rows that touch each other starting with the red, then white, then blue.
When the corn is finished, take off the grill and slather each piece with the mayonnaise on all sides of the corn. next, gently press and roll the corn through the toppings to create a red, white and blue band on each cob. Spritz with lime juice and serve. Enjoy!
