
Mac and Cheese Cakes on the Grill
It's easy to make delicious, extra crispy Mac & Cheese cakes on your Arteflame Grill. Here's what you need.
INGREDIENTS
(SERVES 4)
8 ounces of uncooked elbow macaroni
2 cups of shredded Cheddar cheese (sharp or extra sharp)
1/2 cup grated Parmesan cheese
1 large egg
2 1/2 tablespoons of all purpose flour
1/2 cup of unsalted butter (heated so it's liquid)
Up to 3 cups of milk mixed in last and slowly to make sure the mix is nice and thick. (we're going to make balls from this Mac and cheese mix)
1 cup panko (Japanese bread crumbs). This will make it extra crispy.
PREPARATION
Cook the pasta in salted boiling water until a little less than al dente. Drain, rinse with cold water, and drain the pasta again. You can cook the pasta on your Arteflame or prepare it in the kitchen.
Mix the cheese sauce ingredients together in a bowl adding the milk last. Add the cooked pasta and stir together until evenly mixed. Place the panko bread crumbs in a separate bowl.
Make a ball from about 3 tablespoons of the macaroni and cheese mix. Put this ball into in the bowl of panko best you can and roll it around so the ball is fully coated with panco crumbs. Once coated, flatten it into a thick pancake so it won't break apart when you flip it on the grill.
Cook the pancakes on one side until brown and crispy, about 2 minutes. Flip it and cook the other side until brown and crispy, another 2 minutes. Once both sides are nice and crispy, you're ready to serve!
