Grilled Calamari Salad


ingredients:
1 pound wash rinsed and cut squid bodies2 cloves garlic1 lemon1/2 fennel bulb sliced thin¼ cup chopped roasted red peppers
Good olive oil (Bonacci)
Red pepper flakesSea saltBaby arugulaParsleyParmesan for shaving
directions:
Marinate the squid in 1 tablespoon olive oil, pressed garlic, lemon zest/juice of ½ lemon (save other half), pinch of pepper flakes, and salt for up to an hour (20 minutes is fine).Cook squid on grill until slightly charred. Do not overcook or it will be rubbery and tough.Toss grilled squid in with arugula, fennel, chopped parsley, roasted red peppers, 1 tsp Bonacci Olive oil, ½ lemon juice and pinch of sea salt.Top with fresh shaved parmesan and black pepper.
