Grilled angel food strawberry shortcake

 

Ingredients:

2 tablespoons vegetable oil,

20 strawberries, hulled,

Four 3 to 4 inches thick slices of store bought angel food cake,

One cup of heavy whipping cream,

8 ounces of mascarpone,

2 tablespoons of confectioner sugar,

2 tablespoons of store-bought balsamic glaze for sprigs of fresh mint optional

 

Directions:

Heat your Arteflame grill to operational temperature. Spread the vegetable oil around the cooktop. Slide five strawberries onto a skewer pushing the skewer through the cores. Repeat this process to assemble three more skewers.

Place the skewers on the grill and cook, turning as needed, until you begin to see the skin turn darker. About 3 to 4 minutes per side. Once the strawberries have caramelized, Remove them from their skewers into a large bowl and use a fork to mash them. Stir in remaining strawberries and set aside. 

Next, grill the cake slices until they have turned golden brown, about 30 to 45 seconds per side. Do not let the cake slices cook for more than one minute or they will start to stick. 

Then combine the whipping cream, mascarpone and confectioners sugar into the bowl of an electric mixer. Whip until stiff peaks form; about four minutes.

Plate the cakes individually and top with some strawberries. Drizzle the balsamic glaze over the berries. Dollop the whipped cream on top and garnish each plate with a sprig of fresh mint. Serve immediately.

Note: you can also substitute the homemade whipped cream with store bought Cool Whip.
